Baked Apple Oatmeal
From Molly's Cookbook
1 C. whole rolled oats
1 tsp. cinnamon
pinch of nutmeg
1/4 tsp. sea salt
3 T. maple syrup
1-2 peeled and diced apples. (I grate mine sometimes)
1 1/4 C. milk (I use coconut or almond milk)
Nuts if desired.
Preheat oven to 350. Grease a glass pie plate. Combine all ingredients and mix well. Pour into pie plate. Bake for 25-30 minutes or until the liquid is absorbed. Don't over bake. Remove from oven and allow to cool a bit. Serve with a little milk, whipped cream or yogurt if desired.

Thanks for the yummy recipe! I let it soak overnight and it was DELICIOUS. I was out of apples so I used pears. Your idea to grate the fruit is genius - much better than the diced fruit. This will be a new staple at my house.
