Honey Almond Granola





How are my sugar free mama's doing out there? Did you have a tough weekend like I did? I have been doing just great but I got to go out with my honey this weekend, finally, and something was just missing at the end of the date. Chocolate. You always get a treat at the end of a date! It just didn't feel right. I came home and had toast. It tasted nothing like chocolate. But, I remained strong. The weekdays are fine, the weekends are a little harder. But, I will persevere. Anyone feeling my pain out there?

I decided that today I will make some Honey granola. I haven't had much honey but I need a little crunch in my plain yogurt. I can't see that I posted this before but if I did, now you don't have to go back and look for it. It is a great granola that can be varied with all sorts of ingredients. It stores well and tastes great.

Honey Almond Granola


5 C. rolled oats
1 C. slivered almonds
1 t. cinnamon
1/4 t. salt
1 C. powdered milk

Mix together.

Slightly melt together in microwave:

1 C. honey
3/4 C. oil (grapeseed or coconut oil is great)
1 t. vanilla

Pour over oat mixture and stir until evenly coated. Spread on greased jelly roll pan or pan with parchment paper. Bake at 300 for about 15 min or until lightly golden. Let cool then break up. It should be dry not moist or gooey. You can add other dried fruits at this time. I also like to add shredded coconut while it is baking.

Yes..I feel your pain! Weekends are hard for me too! I made some whole wheat chocolate chip cookies with spectrum shortening and sucanat. Not bad...really dark brown. Sucanat is weird to work with...but unrefined. Any suggestions about it? Do you use it?

I do use it (well before my no sugar gig) and it helps some times to whirl it in the blender to get it a little finer to cook with. It will be a bit like using dk brown sugar. Surely better for you than refined white sugars. But, a different taste.

We had a family dinner last night, which ended with everyone eating a yummy chocolate treat afterward (except me!). I was fine at the time, but it must have put sugar on my brain.

So when we got home, I microwaved a banana for 1 minute, sprinkled with unsweetened cocoa powder and added a dollop of PB. Hit the spot.

Ya. The weekend was tough. Very tough. But, I made it. Looking forward to another week! It isn't as bad as i thought it was going to be! And I lost 3-4 lbs. (Working out hard too. I figure if I am not doing to eat sugar, I am going to make it count. BIG TIME!)

Can I make this without the powdered milk? Would it change the consistency too much?

I had to make my daughters birthday cake yesterday, her favorite, texas sheet cake. So needless to say that was not fun. However, I was good, didn't have a single bite. And I am so proud of myself. Weekends are definitely harder. But once you have a few days under your belt it gets easier.

You could make it without the powdered milk. Add a little whole wheat flour to the mix to get the consistency. You could also add flax seed meal or wheat germ as well.

Yes, the weekends are hard. I even had to turn down The Melting Pot on a date... we got steamed milk instead. :(
Do you have any good recipes for salad dressings without sugar?

Did you soak your oats first? Soaking the grains neutralizes phytic acid, a mineral absorption blocker. Soaking the nuts starts the process of germination, de-activating enzyme inhibitors. A raw granola that does this is a highly nutritious and a great source of digestive enzymes

soaking is something I am slowly getting into but no where near the point where I can give out advice. It is so time consuming but I know it is important. I will get it down someday. I soak nuts and beans but haven't been great about the oats yet. That website is great if anyone wants to learn or go to Kara's class for more info!

Hey! Been sort of "stalking" for a while, but I hadn't read in a few weeks when I sat down tonight. I am one of those "I really need to lose 30 lbs. or so, and I'm so tired all the time, and I really should..." but I'M WEAK! I'm afraid to say I'll give sugar up, because I'm weak!
OK...
I'm saying it...
I'm giving up all "obvious" sugar.
Bring on the fruit!
