The "Cookie"




My sister-in-law just called to ask for this recipe. It is the absolutely best cookie in the world. It is the only thing that I can't control myself around, well , other than a newborn's neck. When we make these, I have to make sure they get shared with others so that they are only in our house for the day.  I had posted this earlier with all the bad sugars but revised it since we are off dairy and don't want the bad sugars even once in a while at home anymore. It is still my favorite cookie!


Chocolate chip coconut oat cookies

1 cup softened butter or coconut oil
2 cups coconut sugar
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1 tsp. baking powder
2 cups whole grain flour (tastes great with whole grain soft white flour)
2 cups oatmeal
1 cup unsweetened coconut
2 cups chocolate chips, I use Sunspire. 

Cream together the butter/coconut oil and sugars. Add eggs and vanilla. Beat until light and fluffy. Add dry ingredients and mix until all incorporated. Add in chocolate chips and stir. Bake at 350 for 8-10 minutes. (or eat the dough straight)

Have you tried coconut sugar? I have had great results in cookies with it.

I have done half and half in this one but not the whole amount of sugar. I was worried that with the burn temp lower they would be cowpies. I will have to try. I use coconut sugar for everything else I have made. I'll let you know!

I have made these with other ingredients to make them healthier but they will never be the same. If you want pure indulgence and the best cookie ever, the bad sugars will only do the trick. If you are making a healthier treat that still tastes good, substitutions are fine. Whole grain flour still makes them taste wonderful but I tried other sugars and it didn't make the perfect cookie. Still, I will eat them any way possible. Once in a while of course!

Butterscotch chips and white chocolate chips mixed are REALLY GOOD TOO!

YUM! I made these with the substitutions I was planning (soft white wheat flour, coconut sugar and organic evaporated cane juice) and they were so delish. I am sure they were slightly different than the original recipe but since I never make cookies they felt like a big indulgence. Thanks for sharing!

No disappointment here, it's nice to see even you give in to cravings once in a while! I love your blog and I feel so bad when I'm not doing things "perfectly" and indulge. Thanks for sharing!
