Start the Day Off Right

Like I have said before, I am a huge breakfast fan. Breakfast is so important to get the body going, giving it a reason to wake up and greet the day. Now, I am not talking fruit loops. A good hearty, warm breakfast. It doesn't have to take much time, in fact most breakfast dishes are quick. Breakfast foods also freeze well so you can make a big batch and freeze them. I love to try out new recipes, especially pancakes. Here is one of my favorite from a little Bed and Breakfast we stayed in Patagonia, AZ. You must serve this with real whipped cream. Syrup will ruin it. Enjoy!

Honey 'n' Spice Blueberry Pancakes

2 cups whole Wheat flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp salt
2 T Sugar
1/8 tsp nutmeg
1/4 tsp ginger
3/4 tsp cinnamon
1/4 cup melted butter
2 T honey
1 egg
2 C buttermilk (Regular Milk OK too)
1 C blueberries, fresh or frozen


Stir Dry ingredients together. Mix in wet ingredients. Cook on griddle.

im so excited it was like a lottery ticket...as I was going down the list I was checking ogg all the ingredients I had on hand and I have all of them! YEAH! I am excited for tomorrow!

Ok, I have been reading your blog for the last 3 hours and you have mnay WONDERFUL recipes... but, they all contain WHEAT FLOUR! How do you do it? What do you feed your autistic son? My son is almost 5, so, I want to be able to make "pancakes" for breakfast that everyone can eat. It seems as if you must feed your son something different at breakfast... can you clue me in? Maybe I need to have a "consultation" with you! :)
